I came across this the other day. Recently, Apple's Pages app added a few more "templates" to use when creating documents. Now students can select to set up a book (in portrait or landscape layout). In addition to text, they can include pictures, graphs, video, and audio.
If you aren't familiar with Pages, it is a word processing application (like Google Docs or Microsoft Word) and for students in 1:1 settings with iPads or Macbooks, it should be installed by default. Below I have a simple how-to guide for getting started.
